I lost this scale at New York JFK Airport and barely managed to find it by gesturing and fumbling with airport staff. Now, scientific methods like genetic testing and pedigree research are used to introduce stallions, but I remember the days when people carried a weighing scale every time they went to buy one—how ignorant we were. It was a transitional period in racehorse breeding, one in which people could not even laugh. Even if no one recognizes it, I take pride in it. In fact, we had made efforts several times in Korea for the demonstration production of racehorses. After failing in places like Yeoncheon, Gyeongju, and Ttukseom, he ultimately succeeded at Wondang Ranch. Later, a plan for racehorse production was established, and with the creation of Jeju Ranch in 1995, racehorse breeding began in earnest.

Using ultrasound diagnostic equipment, which did not exist in the domestic veterinary field, we were able to learn scientific breeding systems and methods such as follicle examination during mating and pregnancy diagnosis, and introduce them to the country. We take pride in being the first to introduce scientific methods to the production of racehorses in our country.There is a second thing I remember. In the 1990s, height was the most important factor in selecting racehorses. When inspecting racehorses, only Koreans carried the measuring devices. After learning the difference between a sandy track and a turf track, I went to the United States to introduce a stallion suited to our situation, but since I still did not understand the importance of bloodline, I brought a weighing device when buying the stallion.

Only these efforts can provide the momentum for the horse industry, having successfully navigated a period of growth, to enter maturityA broad pool of experts should be established so that not only the relevant ministries but also related ones can conduct joint research. In other words, it is necessary to hold a collaborative forum with the Ministry of Agriculture, Food and Rural Affairs, the Ministry of Culture, Sports and Tourism, the Ministry of Education, and other relevant ministries deemed necessary for the growth of the horse industry. Rather than simply returning as a theorist, he is leveraging his extensive field and practical experience to conduct research on on-the-ground needs. Director Choi Gwi-cheol’s extensive field experience is the “seed sown with tears” for the research and development of the advancement of Korea’s language industry. On Saturday, July 4, we visited the Equine Industry Research Institute to meet Director Choi Gwi-cheol, who made a spectacular return as a specialist in the equine industry, combining theory and practice after 30 years with horses.

We must conduct research that is truly alive. Internationalization of horse racing ultimately comes down to skill. Without basic theory and science, and without research, you cannot develop your skills. Horses should be produced, raised, and trained scientifically, and the horsemen—jockeys, trainers, and handlers—must also undergo scientific research in biomechanics regarding feeding management and riding techniques. All of this comes from research. You must not just copy foreign things. In the end, research cannot succeed without people, budgets, and facilities. Although the research infrastructure is still in its early stages, I want to pursue practical research by expanding the research workforce, especially in the field of veterinary science.

At the time, I had an 11-month-old daughter and was so unfamiliar with cooking that I could only peel fruit with my teeth, yet I made that decision out of self-deprecation, seeking a break from the hardships and exhaustion of life as I wrote.In 1999, after leaving Italy like a flight to begin learning to cook, Chef Park Chan-il started truly dedicating himself after seeing a 62-year-old man working hard toward the goal of opening his own restaurant.
